FREEZER MEALS
Last time when I went to my mom's house for holidays, My husband was skipping either breakfast/dinner everyday, due to unavoidable circumstances. So this time I made sure that he never goes hungry. Prepped some freezer meals for him since I'm going outta station.. Now most of u know that freezer meals are very common in foreign countries. But we don't have the habit of freezing the leftovers or preparing 'make ahead' freezer meals. Trust me. It's really useful when it comes to tough times. Now that I've prepared these, I will post the recipes. It might be very useful to you as your loved ones can take care of their hunger pangs at an instant!!
THESE MEALS LASTS ABOUT A MONTH MINIMUM AND 3 MONTHS MAXIMUM. DO NOT RE FREEZE IF ITS THAWED TO ROOM TEMPERATURE. IF YOU HAVE ANY DOUBTS ABOUT 'WHAT TO FREEZE' AND 'WHAT NOT TO', DO ASK IN COMMENT SECTION
BANANA BREAD
3 very ripe bananas
Pinch of baking soda
1/3 cup of oil
1 large egg
1 cup of maida
1/2 cup of whole wheat flour
3/4 cup sugar
1 TSP vanilla extract
Method:
Mash the bananas well, add all the other ingredients and mix well but don't over beat. Pour the batter in a greased 8 inch square pan and bake in a preheated oven for 40 mins. The bread will be sweet and dense. Cool on a wire rack completely. Cut into slices.
Wrap the slices individually tightly in a cling wrap. Put them in a ziploc bag and freeze them.
INSTRUCTIONS
Remove the cling wrap and microwave for 30 seconds
CREAMY TOMATO CHICKEN PASTA
Any short pasta- 200 gms
Boneless chicken- 250gms
Onions med size-1
Capsicums-1 small
Tomato puree- 1 cup
Chopped garlic- 1 /2 whole
Fresh cream 100 ml
Black pitted, sliced olives- 1/4 cup
Olive oil, salt, mixed herbs/Italian seasoning
Method
Add salt, a TSP of olive oil and pasta to boiling water. Drain them al dente. Saute, thinly sliced onions, garlic, capsicums in 2 tbsp of olive oil, add the chicken. Cook for Another 5 mins. add salt and pepper. Pour in tomato puree, seasoning,cream.. bring to a boil and simmer for 3 mins. Add the boiled pasta and mix well. Divide this into 2-3 tupperware or other freezer safe containers. This will make 3 servings of pasta. Label andFreeze them.
INSTRUCTIONS
Thaw the pasta overnight in fridge and microwave for 2-3 mins before serving.
PEANUT BUTTER AND JAM SANDWICHES
Simply freeze the whole load of bread for one hour. It will make it easier to spread the butter and jam. Take 3 slices.. spread peanut butter on one side, cover with another bread, spread with jam on top of it, cover with another bread. Repeat for all slices. You should get a minimum of 5 sandwiches. Wrap them in cling film individually and put them in a ziploc bag, label and freeze.
INSTRUCTIONS
Remove the film and thaw in microwave for 30 seconds. If you're taking it for brunch/snack, keep them as it is.. it will thaw naturally.
MUSHROOM AND EGGS BREAKFAST WRAPS
Mushrooms finely chopped- 200g
Eggs-3
Onions finely chopped-1
Salt, pepper, chili powder- 1/2tsp
Chapati med size -8
Method:
Saute onions and mushrooms together using a lil oil. Add salt and pepper. Cook till done. Beat the eggs well and pour into mushrooms, cook continuously till it resembles scrambled eggs. Add finely chopped coriander leaves and cool it. Divide into 8 portions
Take a chapati and keep a mushroom egg portion and roll tightly. If possible roll them in a parchment paper. Roll all chapattis like this. Put in a ziploc bag, label and freeze.
INSTRUCTIONS
Take the roll out, wrap them in a wet towel and microwave for 2 mins.
